This vibrant Healthy Summer Salad is about to be on repeat in your kitchen! It is packed with fresh strawberries, creamy avocado, hearty farro, and tossed in the most incredible sweet and tangy poppyseed dressing. Perfect for serving a crowd or prepping for your work week lunches!


🛒 Ingredients

For the Salad Base:

  • 2 cups arugula
  • 2 cups spinach
  • 1 cup cucumber, chopped
  • 2 cups sliced strawberries
  • 1 cup sliced red onion (Pro Tip: Soak in cold water for 5 mins to get rid of the harsh bitterness!)
  • 2 cups cooked farro (Swap for quinoa for a Gluten-Free option!)
  • 1 cup cubed avocado
  • 1 cup vegan feta

🍋 For the Creamy Poppyseed Dressing:

  • 1/4 cup white wine vinegar
  • 1/2 cup olive oil
  • 2 tbsp vegan yogurt
  • 2 tbsp maple syrup
  • 2 tsp minced shallot
  • 1 tsp dijon mustard
  • 1/4 tsp salt
  • 1.5 tbsp poppy seeds

🍽️ How to Serve (For a Crowd)

  1. Whisk the Dressing: In a jar or small bowl, combine all of your dressing ingredients and shake or whisk vigorously until smooth and creamy.
  2. Assemble: In a massive serving bowl, layer your washed spinach and arugula. Top with the cooked farro, strawberries, cucumbers, red onion, avocado, and vegan feta.
  3. Toss & Enjoy: Drizzle the dressing all over the salad right before serving, toss well, and enjoy fresh!

🍱 Meal Prep Option (Individual Portions)

  1. Make sure you have thoroughly washed and dried your arugula and spinach.
  2. Cook the farro, let it cool completely, and keep it in its own container.
  3. Slice your red onions, strawberries, and cucumbers, and keep them in separate containers so they don't get soggy.
  4. Make your dressing in advance and store it in a sealed jar in the fridge.
