🛒 Ingredients
🍦 For the Banana Nice Cream:
- 4 frozen bananas (make sure they are very ripe before freezing!)
- 1 tbsp peanut butter
- 1/2 scoop vegan vanilla protein powder
- 1/4 tsp vanilla extract
🍪 For the Edible Cookie Dough:
- 3/4 cup almond flour
- 3 tbsp almond butter
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- A pinch of salt
- 2 tbsp vegan chocolate chips 🍫
👩🍳 How to Make It
- Blend the Base: First, add your frozen bananas, peanut butter, vanilla protein powder, and vanilla extract into a high-speed blender or food processor. Blend until you get a thick, creamy, soft-serve texture.
- Make the Cookie Dough: Next, blend up the cookie dough ingredients (almond flour, almond butter, maple syrup, vanilla, and salt) using a small cup attachment or just mix by hand in a bowl. Once a dough forms, gently stir in your vegan chocolate chips.
- Combine: Break up your freshly made cookie dough into bite-sized pieces and gently fold them right into your banana nice cream.
- Top & Enjoy: Scoop into bowls, top with extra cookie dough chunks and a few more chocolate chips, and enjoy immediately! 😋
Pro tip: If your nice cream gets too soft while mixing, just pop it in the freezer for 15 minutes to firm back up!
