Welcome back to Foodie Finds! This Quinoa Berry Bake is the perfect easy vegan breakfast meal prep. It yields about 4 small servings, but definitely feel free to make a double batch if you prefer a bigger breakfast to start your day! 🔖 Make sure to bookmark this recipe for later!
🛒 Ingredients
- 2 large bananas
- 1 cup quinoa
- 2 tbsp chia seeds
- 2 cups almond milk (or any other plant milk you love)
- 2 tsp cinnamon
- 2 tsp vanilla extract
- 2 tbsp maple syrup
- 1.5 cups fresh or frozen berries
👩🍳 How to Make It
- Mash the Base: In a large baking dish, mash your bananas until relatively smooth. Add in all of the remaining ingredients (except for the berries).
- Whisk & Fold: Whisk everything together until well combined. Next, gently mix in your fresh or frozen berries, making sure they are spread out evenly across the dish.
- Bake: Pop the dish into the oven and bake for 60 minutes, or until the quinoa is fully cooked and the liquid is absorbed.
- Top & Serve: 🤤 Add on your favorite toppings! Try fresh fruit, nuts, seeds, or a big dollop of vegan yogurt! Personally, I love to add my favorite protein icing, extra fresh berries, and crunchy nuts!
