Welcome back to the blog, food lovers! Today, I’m sharing a vibrant, refreshing, and incredibly delicious Vietnamese Inspired Salad. Whether you're looking for a quick lunch, a meal-prep friendly dish, or a light nutrient-packed dinner, this recipe is full of crunch, flavor, and nourishing ingredients.


🥗 Ingredients

  • 100g iceberg lettuce (chopped for that perfect crunch)
  • 2 portions of rice noodles (cooked according to package instructions)
  • 100g finely chopped red cabbage
  • 100g finely chopped cucumber
  • 100g finely chopped carrots
  • Large handful of chopped coriander (or parsley if you prefer)
  • Cooked broccoli and tempeh (featuring @plantpowerfoods)

🥢 The Perfect Tangy Sauce

A salad is only as good as its dressing, and this one hits all the right sweet, tangy, and spicy notes. To make the dressing, mix together:

  • 1 tbsp sesame oil
  • 2 tbsp Apple Cider Vinegar (I love using @willysacv)
  • 2 tbsp sweet chilli sauce
  • 1 tsp garlic powder
  • Chilli flakes to taste 🌶️

👩‍🍳 How to Make It

Simply combine all your prepared veggies, noodles, cooked broccoli, and tempeh in a large salad bowl. Pour your prepared dressing mixture over the top, mix well, and serve! It really is that easy.
