Two banana bread themed recipes in a row? 👀 Well, what can I say, I have overripe bananas at home. And I know you have that one spotty banana sitting on your counter too! This is the absolutely PERFECT recipe to use it up.
🛒 Ingredients
- 1 medium ripe banana (~100g)
- 150ml plant milk
- Sweetener of choice (I used @myvegan toffee flavdrops, alternatively use maple syrup, stevia, agave, etc.)
- 20g peanut butter (or almond, cashew, tahini, sunflower butter…)
- 45g oat flour
- 30g vegan protein powder OR just use more oat flour (I used @myvegan salted caramel soy protein isolate)
- 1/2 tsp baking powder
- Highly Recommended: 1 tsp cinnamon
- Highly Recommended: As many chocolate chips as your heart desires!
👩🍳 How to Make It
- Prep: Preheat your oven to 200°C (400°F).
- Mash & Mix: In an oven-safe ramekin or baking dish, mash your ripe banana until smooth. Stir in the plant milk, your sweetener of choice, and peanut butter.
- Add the Dry: Mix in the oat flour, protein powder, baking powder, and cinnamon until you have a smooth batter.
- Toppings: Sprinkle your chocolate chips right on top!
- Bake: Bake in the preheated oven for 20 minutes until golden and set. Let it cool slightly before digging in!
