🐰 Healthy Peanut Butter Chocolate Bunnies!

Welcome back to Foodie Finds! This is my take on healthier Reese’s eggs from a few years ago. It’s an oldie, but this recipe is still 🙌🏻! The texture on the inside is absolutely 🔥. You can make it 100% plant-based if you use vegan chocolate chips, or just use whatever you’ve got on hand!
🛒 What You Need
Yields exactly 6 bunnies (or cups)!
- 1 ¼ cup vegan chocolate chips
- 2 tbsp coconut oil
- 3/4 cup peanut butter
- 2 ½ tbsp maple syrup
👩🍳 How to Make Them
- Melt the Chocolate: In a microwave-safe bowl, melt the chocolate chips and coconut oil together. Microwave in bursts, stirring every 15 seconds until completely smooth.
- Create the Base: Spray your bunny molds or muffin pans with nonstick spray. Add half of your melted chocolate to the pans, filling them about 1/3 of the way up each cup. Place them in the freezer until the chocolate hardens.
- Make the Filling: In another bowl, use a spoon to mix together the peanut butter and maple syrup until combined into a dough-like consistency.
- Assemble & Set: Once the chocolate base is hardened, add the peanut butter mixture on top, using a knife to flatten it out smoothly. You should have just enough to fill up all 6 cups. Finally, top with the remaining melted chocolate.
- Freeze & Enjoy: Pop them back into the freezer until they are completely firm and you’re ready to eat!
