Welcome back to Foodie Finds! These corn ribs were trending all over social media about a year ago, and I finally got around to trying them. I have to say, it’s such a fun and absolutely delicious way to prepare corn. My entire family loved it! 😋🙌
🛒 Ingredients
For the Corn Ribs:
- 4 pre-cooked corn on the cob
- 2 Tbsp oil
- 1 Tsp salt
- 1 Tsp garlic powder
- 1 Tsp paprika
🌶️ For the Spicy Mayo Sauce:
- 3 Tbsp vegan mayo
- 1 Tbsp sriracha
- A squeeze of fresh lemon
👩🍳 How to Make Them
- Prep the Corn: Carefully cut the pre-cooked corn on the cob in half vertically, and repeat until you have quarters. (Pro tip: To make it easier, you can cut them in half horizontally first!)
- Spice it Up: In a small bowl, mix together the oil, salt, garlic powder, and paprika. Brush this flavorful mixture generously all over the corn "ribs."
- Cook to Crispy:
🔥 Oven Method: Bake at 190°C (375°F) for 25-30 minutes.
💨 Air Fryer Method: Air fry at 190°C (375°F) for 15 minutes. - Make the Dip: While the corn is cooking, simply mix the vegan mayo, sriracha, and a squeeze of lemon in a bowl. Serve alongside the warm corn ribs and enjoy!
These make the absolute perfect appetizer or side dish. Enjoy the crunch!
