🛒 Ingredients

  • 1 (15 oz) can chickpeas, rinsed and drained
  • 1/2 cup almond butter
  • 1/3 cup almond flour
  • 1/3 cup pumpkin purée
  • 1/2 cup maple syrup
  • 1 tbsp almond milk
  • 1.5 tsp pumpkin spice
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • A pinch of sea salt
  • 1/2 cup chocolate chips (plus extra for sprinkling on top!)

👩‍🍳 How to Make Them

  1. Prep: Preheat your oven to 350°F (175°C). Line an 8x8 inch brownie pan with parchment paper.
  2. Blend the Base: Add your rinsed chickpeas, almond butter, pumpkin purée, maple syrup, almond milk, and vanilla into a food processor or blender. Blend until completely smooth.
  3. Add the Dry: Mix in your almond flour, pumpkin spice, baking powder, baking soda, and a pinch of sea salt until a thick batter forms.
  4. Fold & Top: Gently fold in the 1/2 cup of chocolate chips. Pour the batter evenly into your prepared 8x8 pan and sprinkle those extra chocolate chips right on top!
  5. Bake & Cool: Bake for exactly 35 minutes. Once done, let them cool in the pan for at least an hour—this is crucial for them to set up into that perfect fudgy blondie texture!
