Spiced Tomato Rice with Bell Pepper

Ingredients:

  • 2 cups of rice
  • 3 medium tomatoes
  • 1 large onion
  • 3 cloves of garlic
  • 1 inch piece of ginger
  • 1 bell pepper
  • 1 teaspoon of salt
  • 2 tablespoons of olive oil

Kitchen Tools Needed:

  • Blender
  • Stove Top
  • Pressure Cooker

Instructions:

  • Rinse the rice under cold water until the water runs clear. Drain and set aside.
  • In a blender, combine the tomatoes, onion, garlic, and ginger. Blend until smooth to create a puree.
  • Heat olive oil in a pressure cooker over medium heat. Add the tomato puree and cook for about 5 minutes until it thickens slightly.
  • Add salt and stir well. Then, add the rinsed rice to the cooker and stir to coat the rice with the tomato mixture.
  • Pour in 4 cups of water and stir. Close the lid of the pressure cooker and cook on high pressure for 10 minutes.
  • While the rice cooks, chop the bell pepper into small pieces.
  • Once the rice is done, carefully release the pressure and open the lid. Fluff the rice with a fork and mix in the chopped bell pepper.
  • Let it sit for a few minutes to allow the flavors to meld together before serving.
