Spiced Tomato Rice with Bell Pepper

Ingredients:
- 2 cups of rice
- 3 medium tomatoes
- 1 large onion
- 3 cloves of garlic
- 1 inch piece of ginger
- 1 bell pepper
- 1 teaspoon of salt
- 2 tablespoons of olive oil
Kitchen Tools Needed:
- Blender
- Stove Top
- Pressure Cooker
Instructions:
- Rinse the rice under cold water until the water runs clear. Drain and set aside.
- In a blender, combine the tomatoes, onion, garlic, and ginger. Blend until smooth to create a puree.
- Heat olive oil in a pressure cooker over medium heat. Add the tomato puree and cook for about 5 minutes until it thickens slightly.
- Add salt and stir well. Then, add the rinsed rice to the cooker and stir to coat the rice with the tomato mixture.
- Pour in 4 cups of water and stir. Close the lid of the pressure cooker and cook on high pressure for 10 minutes.
- While the rice cooks, chop the bell pepper into small pieces.
- Once the rice is done, carefully release the pressure and open the lid. Fluff the rice with a fork and mix in the chopped bell pepper.
- Let it sit for a few minutes to allow the flavors to meld together before serving.
