Spicy Sofritas Tofu Burritos 😍😍😍
Ingredients
For the Sofritas (Tofu Filling):
- 14 oz block of extra firm tofu, pressed*
- 1 tsp olive oil
- ½ cup finely diced onion
The Sauce Blend:
- 2 chipotle peppers in adobo sauce (canned)
- 2 tbsp adobo sauce (from the can)
- ½ cup vegetable broth
- 2 tbsp tomato paste
- 1 tbsp maple syrup
- 1 tbsp apple cider vinegar
- 3 cloves garlic, peeled
- ½ tsp fine sea salt
- 1 tsp cumin
- ½ tsp chili powder
- ½ tsp smoked paprika
For the Burritos:
- 4 large flour tortillas
- 1 cup Guacamole
- 2 cups loosely packed Lettuce (shredded)
- ¼ - ½ cup Sour cream (vegan or dairy)
- 1 cup diced tomatoes

Instructions
- Prepare the Tofu: If you haven't done so already, press your tofu. Wrap the block in a clean kitchen towel or paper towels and place a heavy object (like a cast-iron skillet or cookbooks) on top for 15–30 minutes to drain excess moisture. Once pressed, use your hands to crumble the tofu into small, bite-sized pieces (simulating the texture of ground meat).
- Make the Spicy Sauce: While the tofu presses, prepare the marinade. In a blender or food processor, combine the chipotle peppers, adobo sauce, broth, tomato paste, maple syrup, apple cider vinegar, garlic cloves, and all spices. Blend until completely smooth. Set aside.
- Brown the Tofu: Heat the 1 tsp olive oil in a large non-stick skillet over medium-high heat. Add the diced onion and sauté for 2–3 minutes until softened. Add the crumbled tofu. Cook for about 5–8 minutes, stirring occasionally. You want the tofu to get slightly golden and chewy on the edges.
- Simmer: Pour the blended spicy sauce into the skillet with the tofu and onions. Reduce heat to medium-low and let it simmer for 5–10 minutes. Cook until the tofu has absorbed most of the liquid and the sauce has thickened. It should be juicy but not runny. Remove from heat.
- Assemble the Burritos:
- Warm: Place tortillas in a dry pan for 15 seconds per side.
- Layer: Add a scoop of spicy tofu, then guacamole, lettuce, tomatoes, and sour cream.
- Roll: Fold sides in and roll tightly.
💡 Chef's Tips:
- Heat Level: If you prefer it mild, use only 1 chipotle pepper. For extra heat, add a splash more adobo sauce.
- Crispier Tofu: Bake crumbled tofu at 375°F (190°C) for 15 mins before adding to the pan for a meatier texture.
- Leftovers: The filling keeps well for 4 days and tastes better the next day!
