Chicken Tikka Masala

Ingredients:

  • 400g of chicken breast
  • 150g of Greek yogurt
  • 2 tablespoons of tikka masala spice mix
  • 1 tablespoon of lemon juice
  • 2 tablespoons of vegetable oil
  • 1 large onion, diced
  • 3 cloves of garlic, minced
  • 1 tablespoon of ginger, minced
  • 1 can (400g) of diced tomatoes
  • 100ml of coconut cream
  • Salt to taste
  • Fresh coriander for garnish

Kitchen Tools Needed:

  • Grill
  • Mixing bowl
  • Pan
  • Cutting board
  • Knife
  • Spatula

Instructions:

  • In a mixing bowl, combine Greek yogurt, tikka masala spice mix, lemon juice, and a pinch of salt. Add the chicken breast pieces and marinate for at least 10 minutes. Preheat the grill.
  • While the chicken is marinating, heat vegetable oil in a pan over medium heat. Add diced onions and sauté until golden brown.
  • Add minced garlic and ginger to the pan and cook for another minute until fragrant.
  • Add the marinated chicken to the pan and cook until browned on all sides, about 5-7 minutes.
  • Stir in the canned diced tomatoes and coconut cream, and let it simmer for 15 minutes until the sauce thickens. Season with salt to taste.
  • Once cooked, garnish with fresh coriander and serve hot.
