Chicken Tikka Masala

Ingredients:
- 400g of chicken breast
- 150g of Greek yogurt
- 2 tablespoons of tikka masala spice mix
- 1 tablespoon of lemon juice
- 2 tablespoons of vegetable oil
- 1 large onion, diced
- 3 cloves of garlic, minced
- 1 tablespoon of ginger, minced
- 1 can (400g) of diced tomatoes
- 100ml of coconut cream
- Salt to taste
- Fresh coriander for garnish

Instructions:
- In a mixing bowl, combine Greek yogurt, tikka masala spice mix, lemon juice, and a pinch of salt. Add the chicken breast pieces and marinate for at least 10 minutes. Preheat the grill.
- While the chicken is marinating, heat vegetable oil in a pan over medium heat. Add diced onions and sauté until golden brown.
- Add minced garlic and ginger to the pan and cook for another minute until fragrant.
- Add the marinated chicken to the pan and cook until browned on all sides, about 5-7 minutes.
- Stir in the canned diced tomatoes and coconut cream, and let it simmer for 15 minutes until the sauce thickens. Season with salt to taste.
- Once cooked, garnish with fresh coriander and serve hot.
