In a bowl, mix the tuna fish, ricotta cheese, chopped olives, mayonnaise, and diced onion. Set aside.
Cut the avocado in half, remove the pit, and scoop some flesh out to create more space for the filling. Mash the scooped avocado with the mango and mix in the egg.
Stuff the avocado halves with the tuna mixture and top with gouda, cheddar, and mozzarella cheese.
Drizzle with olive oil and season with salt and pepper to taste.
Place the stuffed avocados in the air fryer and cook for 10 minutes at 180°C (356°F) until the cheese has melted and is golden brown.
