These healthy brownies are going to completely blow your mind! ✨ Made with a secret ingredient (sweet potato!) they are ultra-fudgy, perfectly sweet, and completely dairy-free, gluten-free, and vegan.
🍫 Ingredients
- 1.5 cups cooked sweet potato (mashed)
- 1/2 cup almond butter
- 1/4 cup almond flour
- 1/4 cup cocoa powder
- 1/2 cup maple syrup
- 1 tbsp oil (coconut, olive, or macadamia)
- 1 tsp vanilla extract
- 1/4 tsp baking soda
- 1/4 tsp baking powder
- A pinch of salt
- 1/2 cup vegan chocolate chips (plus extra for sprinkling on top!)
👩🍳 How to Make Them
- Prep: Preheat your oven to 350°F (175°C). Line a 9x9 inch baking pan with parchment paper.
- Mix the Batter: Add all of your ingredients (except the chocolate chips) into a large baking bowl and mix everything together until smooth and well combined.
- Fold in the Chocolate: Gently stir in your 1/2 cup of vegan chocolate chips.
- Pour & Top: Pour the thick, fudgy batter into your prepared baking pan. Sprinkle some extra chocolate chips right on top for good measure!
- Bake: Bake for 25-30 minutes until the edges are set.
- Cool & Serve: Let the brownies cool for at least an hour before slicing so they can properly set up. Enjoy besties! 💗
