🛒 Ingredients
For the Sticky Sauce:
- 1 heaped tbsp sesame seeds
- 2 tbsp normal soy sauce
- 2 tbsp dark soy sauce
- 2 tbsp Sriracha
- 2 tsp ketchup
- 2 tsp sugar
- 1 tsp rice vinegar
- 2 tbsp water
🥦 For the Stir Fry:
- Vegan chicken (I used @frysfamily)
- 400g noodles (I used @yutaka frozen ramen noodles from @ocado)
- A few tbsp of corn flour (for coating)
- 6 garlic cloves, minced
- 1/2 thumb ginger, minced
- 5-6 Spring onions, chopped
- Veggies of choice: Mushrooms, Cabbage, Green beans, Carrots, and Courgette (Use whatever needs eating!)
- Oil for frying
- Extra sesame seeds
👩🍳 How to Make It
- Mix the Sauce: Combine all of the sauce ingredients into a small bowl, whisk together, and set aside.
- Prep the Chick'n: Cover your chosen vegan chick’n pieces in a couple tbsp of corn flour. Next, drizzle a couple tbsp of your prepared sauce over them and toss to coat again so they get extra sticky!
- Fry to Crispy: Heat some oil in a wok or large pan. Fry the coated chick'n and sprinkle with extra sesame seeds. Cook until beautifully golden and crispy, then remove from the pan and set aside.
- Sauté Aromatics: In the same pan, fry the chopped garlic and ginger for a few minutes until fragrant.
- Cook the Veggies: Add in your chopped spring onions, mushrooms, green beans, carrots, and courgette. Fry until they begin to soften. (Hold off on the cabbage for now!)
- Toss It All Together: Add in the chopped cabbage (as it only takes about a minute to cook!). Toss in your prepared noodles, the crispy chick'n, and pour the rest of that delicious sauce over everything. Stir-fry for another minute or two until everything is hot, sticky, and evenly coated.
Serve immediately with an extra sprinkle of sesame seeds on top. Enjoy your amazing vegan fakeaway!
