Chia Date Oat Pancakes with Lemon Tomato Sauce

Ingredients:

  • 1 cup of oats
  • 2 tbsp of sugar
  • 1/2 cup of whole wheat flour
  • 1/4 tsp of sea salt
  • 5 dates, pitted and chopped
  • 2 tbsp of chia seeds
  • 1 lemon, juiced and zested
  • 1 large tomato, diced

Kitchen Tools Needed:

  • Blender
  • Stove Top
  • Pressure Cooker

Instructions:

  • Blend the oats until they reach a fine flour-like consistency.
  • In a bowl, combine the blended oats, whole wheat flour, sugar, chia seeds, and sea salt.
  • Add the chopped dates and lemon juice to the dry ingredients and mix well until a batter forms. If needed, add water for desired consistency.
  • Heat a non-stick pan on the stove top over medium heat and pour a ladle of the batter to form pancakes.
  • Cook each pancake for about 2 minutes on each side until golden brown.
