Chia Date Oat Pancakes with Lemon Tomato Sauce

Ingredients:
- 1 cup of oats
- 2 tbsp of sugar
- 1/2 cup of whole wheat flour
- 1/4 tsp of sea salt
- 5 dates, pitted and chopped
- 2 tbsp of chia seeds
- 1 lemon, juiced and zested
- 1 large tomato, diced
Kitchen Tools Needed:
- Blender
- Stove Top
- Pressure Cooker
Instructions:
- Blend the oats until they reach a fine flour-like consistency.
- In a bowl, combine the blended oats, whole wheat flour, sugar, chia seeds, and sea salt.
- Add the chopped dates and lemon juice to the dry ingredients and mix well until a batter forms. If needed, add water for desired consistency.
- Heat a non-stick pan on the stove top over medium heat and pour a ladle of the batter to form pancakes.
- Cook each pancake for about 2 minutes on each side until golden brown.
