While the bread is toasting, fill a saucepan with water and bring it to a gentle simmer.
Crack the eggs into a small bowl, then gently slide them into the simmering water to poach for about 3-4 minutes, until the whites are set but the yolk is still runny.
In a bowl, mash the avocado and mix in the lemon juice, salt, and pepper to taste.
Spread the mashed avocado evenly over the toasted bread slices.
Once the eggs are poached, remove them from the water with a slotted spoon and place one egg on top of each avocado toast.
Drizzle the olive oil over the top of the eggs and season with additional salt and pepper if desired.
