Avocado Toast with Poached Eggs

Ingredients:

  • 2 slices of whole-grain bread
  • 1 medium avocado (150g)
  • 2 large eggs
  • 1 tablespoon olive oil (15g)
  • Salt to taste
  • Pepper to taste
  • 1 tablespoon lemon juice (15g)

Kitchen Tools Needed:

  • Toaster
  • Saucepan
  • Spatula
  • Fork

Instructions:

  • Toast the whole-grain bread slices until crispy.
  • While the bread is toasting, fill a saucepan with water and bring it to a gentle simmer.
  • Crack the eggs into a small bowl, then gently slide them into the simmering water to poach for about 3-4 minutes, until the whites are set but the yolk is still runny.
  • In a bowl, mash the avocado and mix in the lemon juice, salt, and pepper to taste.
  • Spread the mashed avocado evenly over the toasted bread slices.
  • Once the eggs are poached, remove them from the water with a slotted spoon and place one egg on top of each avocado toast.
  • Drizzle the olive oil over the top of the eggs and season with additional salt and pepper if desired.
