Gluten-Free Yorkshire Puddings

Ingredients:
- 100g of gluten-free plain flour
- 200ml of milk
- 3 large eggs
- 50ml of vegetable oil
- a pinch of salt
- a pinch of black pepper
Kitchen Tools Needed:

Instructions:
- Preheat the oven to 220°C (428°F).
- In a mixing bowl, combine the gluten-free plain flour and a pinch of salt. Make a well in the center.
- In another bowl, whisk together the eggs and milk until well combined.
- Slowly pour the egg mixture into the flour well, whisking until you achieve a smooth batter without lumps.
- Let the batter rest for about 10 minutes to hydrate the flour.
- While the batter is resting, add 1 tablespoon of vegetable oil into each cup of a muffin tin and place it in the oven to heat until the oil is smoking hot.
- Carefully remove the hot muffin tin from the oven and quickly fill each cup with the batter, ensuring they are about 2/3 full.
- Bake for 20 minutes or until the puddings have risen and are golden brown. Do not open the oven door during cooking to ensure they rise properly.
- Once cooked, remove from the oven and serve immediately.
