Begin by heating a small pan on the stove top and add chopped onions. Sauté the onions on medium heat until they become translucent and slightly caramelized. Remove from heat and let cool.
In a blender, combine the sautéed onions, 50g of melted butter, and 10g of sugar. Blend until smooth.
In a bowl, mix 200g of all-purpose flour with 2g of yeast and 1g of baking soda.
Pour the blended onion mixture into the flour mixture and stir until just combined. Do not overmix. If it's too thick, you can add a little water to reach a thicker batter consistency.
Preheat the oven to 190°C (370°F). Fill a muffin tin with muffin liners or grease it lightly.
Scoop the batter into the muffin tin, filling each cup about 2/3 full.
Bake in the preheated oven for about 15-20 minutes or until the muffins are golden brown and a toothpick comes out clean.
Remove from the oven and let cool slightly before serving.
