Heat some olive oil in a skillet on the stove top over medium heat.
Add the potato slices to the skillet, season with salt, pepper, and Italian herbs, if using. Cook until golden brown and tender, about 10-15 minutes, flipping occasionally.
While the potatoes are cooking, prepare the bread slices by toasting them lightly on one side.
Once the potatoes are done, remove them from the skillet and set aside.
On the non-toasted side of each bread slice, layer the cooked potato slices, followed by slices of mozzarella cheese.
Top with another slice of bread, toasted side up, to form a sandwich.
In the same skillet, carefully place the sandwiches and toast each side until the mozzarella is melted and the bread is golden, about 3-4 minutes per side.
