Mozzarella Potato Sandwich

Ingredients:

  • 4 slices of bread
  • 150g of Mozzarella cheese
  • 2 medium-sized potatoes
  • Olive oil for frying
  • Salt to taste
  • Pepper to taste
  • Italian herbs (optional)

Kitchen Tools Needed:

  • Stove Top

Instructions:

  • Peel and slice the potatoes into thin rounds.
  • Heat some olive oil in a skillet on the stove top over medium heat.
  • Add the potato slices to the skillet, season with salt, pepper, and Italian herbs, if using. Cook until golden brown and tender, about 10-15 minutes, flipping occasionally.
  • While the potatoes are cooking, prepare the bread slices by toasting them lightly on one side.
  • Once the potatoes are done, remove them from the skillet and set aside.
  • On the non-toasted side of each bread slice, layer the cooked potato slices, followed by slices of mozzarella cheese.
  • Top with another slice of bread, toasted side up, to form a sandwich.
  • In the same skillet, carefully place the sandwiches and toast each side until the mozzarella is melted and the bread is golden, about 3-4 minutes per side.
