What I make for lunch when I’m almost hangry…😁 This quick, flavorful lentil burrito comes together in just 15 minutes! It’s packed with spiced lentils, a fresh veggie salsa, and a creamy, tangy sauce. The ultimate quick fix!
🛒 Ingredients
For the Lentil Filling:
- 1 onion, diced
- 1 can (220g) lentils, rinsed
- 1 Tsp each: cumin, smoked paprika, and salt
- 1/2 Tsp each: chili flakes and cinnamon
- 1 Tbsp tomato paste
- A bit of oil for frying
🌽 For the Veggie Salsa:
- 1 bell pepper, finely chopped
- 1 can (200g) corn
- 1 Tbsp vinegar or lemon juice
- 1 chili, finely chopped
- A handful of fresh parsley
- Salt and pepper to taste
🌶️ For the Sauce & Assembly:
- 1/3 cup (80g) vegan cream cheese or yogurt (Homemade cashew cream cheese works great!)
- 1 Tbsp each: hot sauce, maple syrup, and vinegar
- A splash of water to thin the sauce
- 3 Tortillas
- Fresh lettuce
👩🍳 How to Make It
- Cook the Lentils: Heat a bit of oil in a pan. Add the onion, rinsed lentils, spices, and tomato paste. Fry everything together for 5-7 minutes until fragrant and warm.
- Mix the Salsa: In a separate bowl, toss together the chopped bell pepper, corn, chili, parsley, vinegar (or lemon juice), salt, and pepper.
- Whisk the Sauce: In a small dish, mix the vegan cream cheese (or yogurt), hot sauce, maple syrup, and vinegar. Add just a tiny bit of water to thin it into a drizzle-friendly consistency.
- Assemble & Grill: Lay out your tortillas. Layer the lettuce, spiced lentils, veggie salsa, and a generous drizzle of sauce. Roll it up tightly, then grill each side on a hot pan for 2-3 minutes until golden and crispy!
