This nourishing lentil salad is good for your body, and good for your head! ✨ Packed with fresh veggies, sweet mango, and a creamy tahini dressing, it is the absolute perfect lunch to keep you fueled all day long.
🛒 Ingredients
For the Salad:
- 1 cup uncooked lentils
- 1 large cucumber
- 1 cup of tomatoes
- 1/2 of a red onion
- 1/2 bunch of fresh parsley
- 1 fresh mango
🥣 For the Creamy Tahini Dressing:
- 3 tbsp of tahini
- 2 tbsp of olive oil
- 2 tbsp water
- 1 garlic clove (minced)
- 2 tbsp lemon juice
- 2 tbsp of rice vinegar
- 1 tsp agave syrup
- Salt & pepper to taste
👩🍳 Directions
- Cook the Base: Start by cooking your lentils according to the package instructions until tender. Once done, let them cool slightly.
- Chop the Veggies & Fruit: While the lentils are cooking, finely chop up your cucumber, tomatoes, red onion, sweet mango, and fresh parsley.
- Whisk the Dressing: Make the creamy dressing by simply mixing the tahini, olive oil, water, minced garlic, lemon juice, rice vinegar, agave syrup, salt, and pepper in a small bowl until perfectly smooth.
- Assemble & Toss: Add your cooked lentils and all the fresh chopped ingredients into a large serving bowl. Pour your gorgeous tahini dressing over the top, mix thoroughly to coat, and dig in!
