Toast the slice of whole grain bread until golden brown.
While the bread is toasting, bring water to a simmer in a saucepan.
Crack the egg into a small bowl and gently slide it into the simmering water. Poach for about 3 minutes until the white is set but the yolk is still runny.
Remove the egg with a slotted spoon and let it drain on a paper towel.
In a bowl, mash the ripe avocado with lemon juice, salt, and pepper to taste.
Spread the mashed avocado over the toasted bread.
Top the avocado toast with the poached egg, adding an extra drizzle of olive oil if desired.
