Ingredients:

  • 2 Eggs
  • 1 Bell Pepper

  • 2 Bagels
  • 100g Cheddar Cheese
  • 1 Tomato
  • 2 tablespoons Mayonnaise
  • 100ml Milk
  • 50g Oats
  • 1 Banana
  • 1 Apple
  • 1 Pear

Kitchen Tools Needed:

  • Oven
  • Stove Top
  • Blender

Instructions:

  • Preheat the oven to 180°C (350°F).
  • In a frying pan, melt the butter over medium heat. Dice the bell pepper and sauté it in the butter until softened.
  • In a mixing bowl, whisk together the eggs, milk, and mayonnaise until well combined. Stir in the sautéed bell pepper, diced tomato, and grated cheddar cheese.
  • In a blender, combine the oats, banana, apple, and pear until a smooth mixture is formed. This will act as a healthy sweet topping.
  • Split the bagels in half and place them on a baking tray. Pour the egg and veggie mixture over each half of the bagel, ensuring they are evenly covered.
  • Top the egg mixture with the blended fruit oats mixture.
  • Bake in the oven for about 10 minutes or until the egg is set and the top is lightly golden.
