Avocado Toast with Poached Egg

Ingredients:

  • 2 slices of whole grain bread
  • 1 medium avocado (150g)
  • 2 large eggs
  • 1 tablespoon of olive oil (15g)
  • Salt and pepper to taste

  • Saucepan
  • Fork
  • Plate

Instructions:

  • Toast the whole grain bread slices until golden brown.
  • While the bread is toasting, fill a saucepan with water and bring it to a gentle simmer.
  • Crack the eggs into individual cups and carefully slide them into the simmering water to poach them for about 3-4 minutes, until the whites are set but the yolks are still runny.
  • Meanwhile, scoop the avocado into a bowl and mash it with a fork, incorporating olive oil, salt, and pepper to taste.
  • Spread the mashed avocado evenly over the toasted bread slices.
  • Once the eggs are poached, remove them from the water with a slotted spoon and place one egg on top of each slice of avocado toast.
  • Season with additional salt and pepper if desired, and serve immediately.
