Baked Cod with Lentil Salad

Ingredients:

  • 200g of cod fillet
  • 100g of cooked lentils
  • 50g of cherry tomatoes
  • 30g of cucumber
  • 20g of red onion
  • 15ml of olive oil
  • 10g of lemon juice
  • 1g of salt
  • 1g of black pepper
  • 5g of fresh parsley

Kitchen Tools Needed:

  • Baking dish
  • Mixing bowl
  • Fork
  • Oven
  • Measuring cups
  • Knife

Instructions:

  • Preheat the oven to 180°C (350°F).
  • Place the cod fillet in a baking dish and drizzle with olive oil and lemon juice. Season with salt and pepper.
  • Bake the cod in the preheated oven for 15-20 minutes or until the fish flakes easily with a fork.
  • While the cod is baking, prepare the lentil salad. In a mixing bowl, combine the cooked lentils, chopped cherry tomatoes, diced cucumber, finely chopped red onion, and chopped fresh parsley.
  • Drizzle the lentil salad with a little olive oil and season with salt and pepper to taste. Mix well to combine all ingredients.
  • Once the cod is done, serve it alongside the lentil salad.
