Place the cod fillet in a baking dish and drizzle with olive oil and lemon juice. Season with salt and pepper.
Bake the cod in the preheated oven for 15-20 minutes or until the fish flakes easily with a fork.
While the cod is baking, prepare the lentil salad. In a mixing bowl, combine the cooked lentils, chopped cherry tomatoes, diced cucumber, finely chopped red onion, and chopped fresh parsley.
Drizzle the lentil salad with a little olive oil and season with salt and pepper to taste. Mix well to combine all ingredients.
Once the cod is done, serve it alongside the lentil salad.
