Crispy Veggie Cashew Patties

Ingredients:

  • 200g of Cashew Nuts
  • 50g of Butter
  • 4 slices of Bread
  • 2 large Eggs
  • 1 medium Onion, chopped
  • 2 medium Potatoes, boiled and mashed
  • 200g of Cabbage, finely shredded
  • 100g of Carrot, grated
  • 100g of Corn (canned or boiled)
  • 2 tablespoons of Vegetable Oil

Kitchen Tools Needed:

  • Blender
  • Stove Top

Instructions:

  • In a blender, combine the cashew nuts, boiled and mashed potatoes, shredded cabbage, grated carrot, and corn. Blend until smooth, but leave some texture.
  • In a mixing bowl, add the blended mixture, chopped onions, and eggs. Mix well to form a dough-like consistency.
  • Take the bread slices and cut off the crusts. Soften them in warm water for a minute, then squeeze out excess water and add them to the mixture. Mix until everything is combined.
  • Shape the mixture into small patties.
  • Heat vegetable oil in a skillet over medium heat.
  • Fry the patties until golden brown and crispy on both sides, about 3-4 minutes per side.
  • Remove the patties and place them on a paper towel to absorb excess oil.
  • Serve warm, optionally with a dipping sauce.
