Herbed Chicken Quinoa Bowl

Ingredients:

  • 200g of quinoa
  • 2 chicken breasts (about 300g)
  • 1 tablespoon of olive oil
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • 1 teaspoon of dried basil
  • 1 teaspoon of dried oregano
  • 200g of mixed bell peppers
  • 1 medium zucchini
  • Salt to taste
  • Pepper to taste

Kitchen Tools Needed:

  • pot
  • pan
  • knife
  • cutting board
  • measuring cups
  • spatula

Instructions:

  • Rinse the quinoa under cold water and cook it according to the package instructions (about 15 minutes).
  • Meanwhile, slice the chicken breasts into thin strips and season with garlic powder, onion powder, dried basil, dried oregano, salt, and pepper.
  • In a large pan over medium heat, add olive oil and sauté the chicken strips until they are fully cooked and golden, about 5-7 minutes.
  • While the chicken is cooking, chop the bell peppers and zucchini into bite-sized pieces.
  • Add the chopped vegetables to the pan with the chicken and cook for an additional 5 minutes until the vegetables are tender but crisp.
  • Once the quinoa is finished cooking, fluff it with a fork and divide it between two serving bowls.
  • Top the quinoa with the chicken and vegetable mixture, and serve warm.
