Grilled Chicken Salad with Quinoa

Ingredients:

  • 150g of grilled chicken breast
  • 100g of cooked quinoa
  • 50g of mixed salad greens
  • 50g of cherry tomatoes
  • 20g of cucumber
  • 15g of feta cheese
  • 10ml of olive oil
  • 10ml of lemon juice
  • Salt and pepper to taste

Kitchen Tools Needed:

  • grill
  • mixing bowl
  • knife
  • cutting board
  • measuring cups

Instructions:

  • Grill the chicken breast until fully cooked and golden brown, about 6-7 minutes on each side.
  • While the chicken is grilling, cook the quinoa according to package instructions and set aside once done.
  • In a mixing bowl, combine the mixed salad greens, halved cherry tomatoes, and sliced cucumber.
  • Once the chicken is cooked, let it rest for a few minutes before slicing it into strips.
  • Add the quinoa to the salad bowl and mix well.
  • Top the salad with the grilled chicken strips and crumbled feta cheese.
  • Drizzle olive oil and lemon juice over the salad and season with salt and pepper to taste. Mix everything together gently.
