Vegetable Cheese Rice Bake

Ingredients:

  • 300g of Rice
  • 200g of Tomato
  • 100g of Onion
  • 50g of Spring Onion
  • 100g of Green Chilies
  • 150g of Bell Pepper
  • 50g of Butter
  • 50g of Flour
  • 200ml of Milk
  • 100g of Garlic
  • 150g of Mozzarella Cheese
  • 100g of Cheese
  • 200g of Mushroom
  • 150g of Capsicum
  • 30g of Ginger
  • 50ml of Vegetable Oil

Kitchen Tools Needed:

  • Air Fryer

Instructions:

  • Start by cooking the rice according to package instructions, then set aside.
  • In a frying pan, heat 50ml of vegetable oil over medium heat, add chopped onions, garlic, and ginger, sautéing until soft and fragrant.
  • Add diced bell peppers, mushroom, and capsicum to the pan and cook for about 5-7 minutes until they soften.
  • Stir in chopped tomatoes, spring onions, and sliced green chillies, cooking for an additional 5 minutes.
  • In a separate saucepan, melt 50g of butter, then whisk in 50g of flour to create a roux, cooking for about 2-3 minutes.
  • Gradually add 200ml of milk, whisking continuously to avoid lumps until the mixture thickens into a creamy sauce.
  • Combine the cooked rice with the vegetable mixture and creamy sauce, mixing well to combine.
  • Transfer everything into a baking dish and top generously with mozzarella cheese and other cheese.
  • Place the dish in the air fryer and cook at 180°C for 15-20 minutes until the cheese is melted and golden.
